Armonia is made from olives of the Frantoio variety picked at the right level of ripeness every year.
At the moment of picking the olive skins range in colour from partly turned (from the deep green to purple) to those which have almost completely turned, while the pulp remains a light shade.

Within 12 hours of picking the olives are taken to the olive-press on the farm. They are pressed "cold", using a system of knives which break the olives without causing heat variations, horizontal kneaders and decanters, which work without the addition of water. The oil is then filtered by dripping with a cotton filter, before storing in stainless steel containers.

Chemical characteristics: the oil belongs to a category of extra virgin olive oils which keep well over time.
Olfactory characteristics:the aromatic notes express tones of medium intensity, herbaceous and of almond. The herbaceous sensations allude to those of freshly mown grass, artichoke leaves.
Taste characteristics: the olfactory sensations are confirmed on the palate. Marked notes of artichoke, fresh vegetables and a spicy after-taste characterise this oil with its medium-long lasting persistence in the throat, lending harmony and balance to the product.

Intenso is produced using olives of the Leccino variety. The olives are picked from bitter to the right degree of ripeness, when the olive skins range from green to partly turned.

Within 12 hours the olives are taken to the olive-press on the farm, with kneading times varying from 20 to 30 minutes, and no water added. The oil is then filtered by dripping with a cotton filter, before storing in stainless steel containers.

Chemical characteristics: the oil belongs to a category of extra virgin olive oils which keep well over time.
Olfactory characteristics: the aromatic notes express tones of medium-strong intensity, decidedly herbaceous. The herbaceous sensations allude to those of wild herbs, artichoke and cardoon.
Taste characteristics: in the mouth the organoleptic properties express themselves differently. Notes of artichoke stem and cardoon emerge clear with a slightly spicy,lingering after-taste in the throat.
